Salted Caramel Banana Pikelets Recipe
I’ve never met a single person that doesn’t like a pikelet. They are universally loved for their sheer simplicity and moreish nature.
These salted caramel and banana flavoured pikelets are a hit with everyone! They have a beautiful delicate flavour and are super easy to make.
Here is what you’ll need:
Self raising flour, baking powder, an egg, a banana, some milk and a packet of caramel.
Regarding the caramel: I bought this packet of salted caramel cupcake filling to use in this recipe and it worked really well. You could also use caramel Top n Fill, substitute it for half a cup of caramel chips or use honey instead and make banana honey pikelets. Look in your supermarket’s baking section and see what they have on offer.
Sift the flour and baking powder in one bowl and combine the rest of the ingredients in a jug. Pour the jug of wet ingredients into the flour bowl and stir well to combine. Then drop tablespoonfuls of batter into a frying pan and cook for two minutes until bubbles form, then flip and cook for another two minutes. Rest on a cooling rack and enjoy straight away!
These delicious little pikelets are perfect lunchbox fillers. Pop them in our little snack bags for the perfect morning tea or recess treat.
1 cup self raising flour, sifted
1/2 teaspoon baking powder
1 banana, mashed
4 tablespoons salted caramel filling
3/4 cup milk
- Place the flour and baking powder in a bowl and make a well in the centre.
- Place the banana, caramel, milk and egg in a separate bowl and whisk to combine. Gradually add the banana mixture to the flour and mix until smooth.
- Heat a lightly greased non-stick frying pan over low heat. Add tablespoonfuls of the batter to the pan and cook, in batches, for 2 minutes or until bubbles appear on the surface. Flip and cook for a further 1−2 minutes or until light golden.
Makes about 20 pikelets
Place pikelets into a zip locked snack bag and freeze for up to two months.
