Blueberry Mango Breakfast Pouches

If your mornings are as hectic and crazy as mine usually are, you’ll be as glad that you’ve come across this recipe as I am! These Blueberry Mango Breakfast Pouches are exactly what I need to grab and go for a healthy, nutritious breakfast on the run. They are perfect to eat in the car as I’m dropping children off at school and make for an ideal fuss-free breakfast.

Filled with the goodness of fresh blueberries and mango, yoghurt and wheat germ, these breakfast pouches are healthy and simple to make.

You can use fresh or frozen mango and will need one-quarter of a cup, or the equivalent of one cheek. You can also use whatever yoghurt you prefer, be it all natural fat-free Greek yoghurt or a child-sized tub of vanilla. Whatever you have on hand is fine.

Ingredients
1/4 cup blueberries
1/4 cup mango, chopped
2 tbsp yoghurt
1 tbsp wheat germ
A splash of milk to reach desired consistency (optional)

Method

  1. Place all ingredients (except for the milk) into a food processor, blender or smoothie maker and blitz until well combined and smooth. There might be bits of blueberry skin that may not blitz as finely as we’d like but that’s fine and won’t affect the taste or enjoyment of the smoothie.
  2. Add a splash of milk to reach the desired consistency if required.

You may prefer a thicker smoothie but I like to add a little milk to mine. You make yours however you prefer it.

This breakfast pouch recipe makes enough mixture to fill two 200ml reusable pouches. It will keep in the fridge for up to two days.
